Fresh Pick – Fennel

We are coming to the end of the fennel season here in BC, but I thought it would be fun to throw in something a little different to get us thinking outside the box.

Fennel

Fennel is a unique looking vegetable.  It is white and bulbous at the base with long green fronds that look a lot like dill.  All parts of the plant are edible, and the flavour is akin to anise and licorice.  It’s one of those foods that people either love or hate.

Sausage with Fennel and Potato

Sausage with Fennel and Potato

This recipe was developed when I received a fennel bulb in my weekly CSA box. I had never cooked with fennel before, but knew that the flavour would pair well with some sausage and potatoes that I had on hand. The dish is light enough in flavour for summer, yet still provides the comfort of a winter stew. I suggest enjoying it with the rest of the bottle of white wine needed for cooking – be sure to get a good one!
